Keto Cranberry Orange Scones

Ingredients:

✅ 2 cups almond flour
✅ ¼ cup coconut flour
✅ ⅓ cup granulated keto sweetener (like erythritol or monk fruit)
✅ 1 tsp baking powder
✅ ¼ tsp salt
✅ ½ tsp cinnamon (optional)
✅ 1 tbsp orange zest
✅ 1 tsp vanilla extract
✅ 1 large egg
✅ ¼ cup unsalted butter, melted
✅ ¼ cup heavy cream
✅ ⅓ cup fresh or frozen cranberries (chopped)

Glaze (Optional):

🔸 ¼ cup powdered keto sweetener
🔸 1 tbsp fresh orange juice

Instructions:

1️⃣ Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
2️⃣ In a bowl, whisk together almond flour, coconut flour, sweetener, baking powder, salt, and cinnamon.
3️⃣ Stir in orange zest, vanilla extract, egg, melted butter, and heavy cream until a dough forms.
4️⃣ Gently fold in chopped cranberries.
5️⃣ Transfer the dough onto the baking sheet, shape it into a circle (about 1-inch thick), and cut it into 8 wedges.
6️⃣ Separate the wedges slightly and bake for 18-22 minutes or until golden brown.
7️⃣ Let cool, then drizzle with the orange glaze if using.
