Keto Cottage Cheese Brownie Bites

Ingredients:
- 1/2 cup cottage cheese (full-fat, smooth or blended)
- 1/4 cup almond flour
- 2 tbsp coconut flour
- 1/4 cup cocoa powder (unsweetened)
- 1/4 cup powdered erythritol or preferred keto sweetener
- 1 egg
- 1/2 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp sugar-free chocolate chips (optional)
Instructions:
- Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners or grease well.
- In a bowl, blend the cottage cheese until smooth (you can use a hand blender or food processor).
- Add the egg, vanilla extract, and sweetener to the cottage cheese. Mix well.
- In a separate bowl, combine almond flour, coconut flour, cocoa powder, baking powder, and salt.
- Gradually mix the dry ingredients into the wet mixture. Stir until fully combined.
- If using, fold in sugar-free chocolate chips.
- Spoon the batter into the mini muffin cups, filling them about 3/4 full.
- Bake for 12–15 minutes, or until a toothpick inserted comes out mostly clean (a few moist crumbs are okay — you want them fudgy!).
- Let them cool completely before removing from the tin — they firm up as they cool.
Tips:
- For extra richness, drizzle with melted sugar-free chocolate once cooled!
- Store in the fridge for up to 5 days or freeze for a longer shelf life.
