Keto Cottage Cheese Brownie Bites

Ingredients:

  • 1/2 cup cottage cheese (full-fat, smooth or blended)
  • 1/4 cup almond flour
  • 2 tbsp coconut flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/4 cup powdered erythritol or preferred keto sweetener
  • 1 egg
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp sugar-free chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with liners or grease well.
  2. In a bowl, blend the cottage cheese until smooth (you can use a hand blender or food processor).
  3. Add the egg, vanilla extract, and sweetener to the cottage cheese. Mix well.
  4. In a separate bowl, combine almond flour, coconut flour, cocoa powder, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture. Stir until fully combined.
  6. If using, fold in sugar-free chocolate chips.
  7. Spoon the batter into the mini muffin cups, filling them about 3/4 full.
  8. Bake for 12–15 minutes, or until a toothpick inserted comes out mostly clean (a few moist crumbs are okay — you want them fudgy!).
  9. Let them cool completely before removing from the tin — they firm up as they cool.

Tips:

  • For extra richness, drizzle with melted sugar-free chocolate once cooled!
  • Store in the fridge for up to 5 days or freeze for a longer shelf life.
