Keto Coleslaw
Ingredients:
- 1 small head of green cabbage, finely shredded
- 1 small head of red cabbage, finely shredded (optional, for color)
- 2 large carrots, peeled and finely shredded (optional, use sparingly for lower carbs)
- 1/2 cup mayonnaise (make sure it’s low-carb or keto-friendly)
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon erythritol or another keto-friendly sweetener (adjust to taste)
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
- Prepare the Vegetables:
- In a large bowl, combine the shredded green cabbage, red cabbage (if using), and carrots (if using). Mix well.
- Make the Dressing:
- In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and erythritol. Adjust the sweetness to taste.
- Combine:
- Pour the dressing over the shredded vegetables and toss until everything is evenly coated.
- Season:
- Add salt and pepper to taste. You can also mix in some fresh parsley if you like.
- Chill:
- Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve:
- Give the coleslaw a final toss before serving. Enjoy!
