Keto Coleslaw

Ingredients:

  • 1 small head of green cabbage, finely shredded
  • 1 small head of red cabbage, finely shredded (optional, for color)
  • 2 large carrots, peeled and finely shredded (optional, use sparingly for lower carbs)
  • 1/2 cup mayonnaise (make sure it’s low-carb or keto-friendly)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon erythritol or another keto-friendly sweetener (adjust to taste)
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions:

  1. Prepare the Vegetables:
    • In a large bowl, combine the shredded green cabbage, red cabbage (if using), and carrots (if using). Mix well.
  2. Make the Dressing:
    • In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, and erythritol. Adjust the sweetness to taste.
  3. Combine:
    • Pour the dressing over the shredded vegetables and toss until everything is evenly coated.
  4. Season:
    • Add salt and pepper to taste. You can also mix in some fresh parsley if you like.
  5. Chill:
    • Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Serve:
    • Give the coleslaw a final toss before serving. Enjoy!
