Keto Cinnamon Sugar Tortilla Roll Ups

Ingredients:
For the Tortillas:
- 1 cup almond flour
- 2 tablespoons coconut flour
- 1 teaspoon xanthan gum
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 tablespoon water (if needed)
For the Cinnamon Sugar Filling:
- 2 tablespoons unsalted butter, melted
- 1/4 cup granulated erythritol (or your preferred keto-friendly sweetener)
- 1 teaspoon ground cinnamon
Instructions:
For the Tortillas:
- Mix Dry Ingredients: In a medium bowl, combine the almond flour, coconut flour, xanthan gum, baking powder, and salt.
- Add Wet Ingredients: Add the egg and mix until a dough forms. If the dough is too dry, add water, one tablespoon at a time, until the dough comes together.
- Roll Out the Dough: Divide the dough into 4 equal portions. Place each portion between two sheets of parchment paper and roll it out into a thin circle, about 6 inches in diameter.
- Cook the Tortillas: Heat a non-stick skillet over medium heat. Cook each tortilla for about 1-2 minutes on each side, or until lightly browned and cooked through. Set aside to cool slightly.
For the Cinnamon Sugar Filling:
- Prepare Filling: In a small bowl, combine the granulated erythritol and ground cinnamon.
- Brush with Butter: Brush the melted butter over one side of each tortilla.
- Sprinkle with Cinnamon Sugar: Sprinkle the cinnamon sugar mixture evenly over the buttered side of each tortilla.
To Assemble:
- Roll Up: Roll up each tortilla tightly.
- Slice: Cut each roll-up into 1-inch pieces.
Optional:
- Extra Drizzle: For added sweetness, you can drizzle a bit of sugar-free maple syrup or melted sugar-free chocolate over the top before serving.
