Ingredients

For the Dough:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol (or your preferred keto sweetener)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cold water (as needed)

For the Cinnamon Filling:

  • 2 tablespoons granulated erythritol (or your preferred keto sweetener)
  • 1 tablespoon ground cinnamon
  • 1 tablespoon melted butter

For the Glaze (optional):

  • 2 tablespoons powdered erythritol (or your preferred keto sweetener)
  • 1 tablespoon heavy cream
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the Dough:
    • In a large bowl, mix together the almond flour, coconut flour, erythritol, salt, and baking powder.
    • Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Beat the egg and vanilla extract together, then add to the flour mixture. Stir until combined.
    • If the dough is too crumbly, add cold water, one tablespoon at a time, until it holds together.
  3. Roll Out the Dough:
    • Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thickness. Remove the top layer of parchment paper.
  4. Add Cinnamon Filling:
    • Brush the melted butter over the rolled-out dough.
    • In a small bowl, mix together the erythritol and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
  5. Shape and Cut:
    • Carefully roll up the dough, starting from one edge to the other, creating a log or cylinder.
    • Slice the log into approximately 1-inch wide pieces and place them on the prepared baking sheet.
  6. Bake:
    • Bake in the preheated oven for 12-15 minutes, or until the puff pastries are golden brown and slightly crisp.
  7. Prepare the Glaze (Optional):
    • While the pastries are baking, mix together the powdered erythritol, heavy cream, and vanilla extract until smooth.
    • Once the pastries have cooled slightly, drizzle the glaze over the top.
  8. Cool and Enjoy:
