Ingredients
For the Dough:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup granulated erythritol (or your preferred keto sweetener)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons cold water (as needed)
For the Cinnamon Filling:
- 2 tablespoons granulated erythritol (or your preferred keto sweetener)
- 1 tablespoon ground cinnamon
- 1 tablespoon melted butter
For the Glaze (optional):
- 2 tablespoons powdered erythritol (or your preferred keto sweetener)
- 1 tablespoon heavy cream
- 1/4 teaspoon vanilla extract

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Dough:
- In a large bowl, mix together the almond flour, coconut flour, erythritol, salt, and baking powder.
- Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Beat the egg and vanilla extract together, then add to the flour mixture. Stir until combined.
- If the dough is too crumbly, add cold water, one tablespoon at a time, until it holds together.
- Roll Out the Dough:
- Place the dough between two sheets of parchment paper and roll out to about 1/8 inch thickness. Remove the top layer of parchment paper.
- Add Cinnamon Filling:
- Brush the melted butter over the rolled-out dough.
- In a small bowl, mix together the erythritol and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
- Shape and Cut:
- Carefully roll up the dough, starting from one edge to the other, creating a log or cylinder.
- Slice the log into approximately 1-inch wide pieces and place them on the prepared baking sheet.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the puff pastries are golden brown and slightly crisp.
- Prepare the Glaze (Optional):
- While the pastries are baking, mix together the powdered erythritol, heavy cream, and vanilla extract until smooth.
- Once the pastries have cooled slightly, drizzle the glaze over the top.
- Cool and Enjoy:
