Keto Cinnamon Low Carb Rolls
Ingredients:
For the Dough:
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
- 1 1/4 cups almond flour
- 1/4 cup coconut flour
- 1 tbsp baking powder
- 1/2 tsp xanthan gum (optional, for better texture)
- 1/4 cup granulated erythritol (or preferred low-carb sweetener)
- 1 tsp vanilla extract
For the Filling:
- 1/4 cup butter, melted
- 1/2 cup granulated erythritol (or preferred low-carb sweetener)
- 2 tbsp ground cinnamon
For the Frosting:
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol (or preferred low-carb sweetener)
- 1 tsp vanilla extract
- 2 tbsp heavy cream (or as needed for desired consistency)
Instructions:
- Preheat your oven:
- Preheat to 375°F (190°C). Line a baking dish or a baking tray with parchment paper.
- Prepare the dough:
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for about 1-2 minutes until melted, then stir to combine.
- In another bowl, mix the almond flour, coconut flour, baking powder, xanthan gum, and granulated erythritol.
- Add the melted cheese mixture to the dry ingredients. Add the eggs and vanilla extract. Mix until a dough forms. You may need to knead it with your hands to get it well combined.
- Roll out the dough:
- Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
- Add the filling:
- Brush the melted butter over the dough. In a small bowl, mix the granulated erythritol and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
- Form the rolls:
- Carefully roll up the dough from one long edge to the other, creating a tight log. Slice the log into 1-inch thick rolls and place them in the prepared baking dish or on the baking tray.
- Bake the rolls:
- Bake in the preheated oven for about 15-20 minutes, or until the rolls are golden brown.
- Prepare the frosting:
- While the rolls are baking, mix the softened cream cheese, powdered erythritol, vanilla extract, and heavy cream in a bowl until smooth and creamy.
- Frost the rolls:
- Once the rolls are out of the oven, let them cool for a few minutes before spreading the cream cheese frosting on top.
