Keto Cinnamon Low Carb Rolls

Ingredients:

For the Dough:

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 2 large eggs
  • 1 1/4 cups almond flour
  • 1/4 cup coconut flour
  • 1 tbsp baking powder
  • 1/2 tsp xanthan gum (optional, for better texture)
  • 1/4 cup granulated erythritol (or preferred low-carb sweetener)
  • 1 tsp vanilla extract

For the Filling:

  • 1/4 cup butter, melted
  • 1/2 cup granulated erythritol (or preferred low-carb sweetener)
  • 2 tbsp ground cinnamon

For the Frosting:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered erythritol (or preferred low-carb sweetener)
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream (or as needed for desired consistency)

Instructions:

  1. Preheat your oven:
    • Preheat to 375°F (190°C). Line a baking dish or a baking tray with parchment paper.
  2. Prepare the dough:
    • In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for about 1-2 minutes until melted, then stir to combine.
    • In another bowl, mix the almond flour, coconut flour, baking powder, xanthan gum, and granulated erythritol.
    • Add the melted cheese mixture to the dry ingredients. Add the eggs and vanilla extract. Mix until a dough forms. You may need to knead it with your hands to get it well combined.
  3. Roll out the dough:
    • Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  4. Add the filling:
    • Brush the melted butter over the dough. In a small bowl, mix the granulated erythritol and ground cinnamon. Sprinkle this mixture evenly over the buttered dough.
  5. Form the rolls:
    • Carefully roll up the dough from one long edge to the other, creating a tight log. Slice the log into 1-inch thick rolls and place them in the prepared baking dish or on the baking tray.
  6. Bake the rolls:
    • Bake in the preheated oven for about 15-20 minutes, or until the rolls are golden brown.
  7. Prepare the frosting:
    • While the rolls are baking, mix the softened cream cheese, powdered erythritol, vanilla extract, and heavy cream in a bowl until smooth and creamy.
  8. Frost the rolls:
    • Once the rolls are out of the oven, let them cool for a few minutes before spreading the cream cheese frosting on top.
  9. Serve:
