Keto Churro Doughnut Hole

Ingredients:

For the Doughnut Holes:

  • 1 ½ cups almond flour
  • 2 tbsp coconut flour
  • 2 tbsp sweetener (like erythritol or monk fruit)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 2 tbsp unsweetened almond milk (or other low-carb milk)
  • 2 tbsp melted butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (optional)

For the Cinnamon-Sugar Coating:

  • 2 tbsp erythritol or monk fruit sweetener
  • 2 tsp ground cinnamon

Instructions:

For the Doughnut Holes:

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or doughnut hole pan with cooking spray or line it with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, baking powder, salt, and sweetener.
  3. In a separate bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. The batter should be thick but easy to spoon.
  5. Scoop the batter into the mini muffin or doughnut hole pan, filling each cavity about ¾ full.
  6. Bake for 12-15 minutes, or until the tops are golden brown and a toothpick comes out clean.
  7. Allow the doughnut holes to cool for a few minutes in the pan, then remove them and place them on a wire rack.

For the Cinnamon-Sugar Coating:

  1. While the doughnut holes are cooling, mix the cinnamon and sweetener in a small bowl.
  2. Once the doughnut holes are cool enough to handle, roll each one in the cinnamon-sugar mixture to coat them evenly.
