Keto Churro Doughnut Hole
Ingredients:
For the Doughnut Holes:
- 1 ½ cups almond flour
- 2 tbsp coconut flour
- 2 tbsp sweetener (like erythritol or monk fruit)
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- 2 tbsp unsweetened almond milk (or other low-carb milk)
- 2 tbsp melted butter (or coconut oil)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon (optional)
For the Cinnamon-Sugar Coating:
- 2 tbsp erythritol or monk fruit sweetener
- 2 tsp ground cinnamon
Instructions:
For the Doughnut Holes:
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or doughnut hole pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, combine the almond flour, coconut flour, baking powder, salt, and sweetener.
- In a separate bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until well combined. The batter should be thick but easy to spoon.
- Scoop the batter into the mini muffin or doughnut hole pan, filling each cavity about ¾ full.
- Bake for 12-15 minutes, or until the tops are golden brown and a toothpick comes out clean.
- Allow the doughnut holes to cool for a few minutes in the pan, then remove them and place them on a wire rack.
For the Cinnamon-Sugar Coating:
- While the doughnut holes are cooling, mix the cinnamon and sweetener in a small bowl.
- Once the doughnut holes are cool enough to handle, roll each one in the cinnamon-sugar mixture to coat them evenly.
