Keto Churro Chaffles

Ingredients:

For the Chaffles:

  • 1 cup shredded mozzarella cheese
  • 1/4 cup almond flour
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

For the Churro Coating:

  • 1/4 cup granulated erythritol or monk fruit sweetener
  • 1 tablespoon ground cinnamon

Instructions:

  1. Preheat Waffle Maker:
    • Preheat your waffle maker according to its instructions.
  2. Prepare the Chaffle Batter:
    • In a microwave-safe bowl, melt the mozzarella cheese in 30-second intervals, stirring in between, until fully melted.
    • In a mixing bowl, combine the melted cheese, almond flour, eggs, vanilla extract, and cinnamon. Mix until smooth.
  3. Cook the Chaffles:
    • Lightly grease your waffle maker if needed.
    • Pour enough batter into the waffle maker to cover the surface (amount will vary depending on the size of your waffle maker).
    • Close the waffle maker and cook according to the manufacturer’s instructions, usually for about 3-5 minutes, until the chaffles are golden brown.
  4. Prepare the Churro Coating:
    • In a small bowl, mix the erythritol or monk fruit sweetener with the cinnamon.
  5. Coat the Chaffles:
    • Once the chaffles are cooked, remove them from the waffle maker and immediately sprinkle both sides with the cinnamon-sweetener mixture while they are still warm.
  6. Serve:
    • Enjoy your keto churro chaffles as a snack or dessert. They’re great on their own, or you can dip them in a low-carb chocolate sauce or whipped cream for extra indulgence.
