Keto Chocolate Waffles

Ingredients

  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup erythritol (or monk fruit sweetener)
  • 1 tsp baking powder
  • Pinch of salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted (or coconut oil)
  • 1/3 cup unsweetened almond milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat your waffle maker according to its instructions.
  2. Mix dry ingredients: In a bowl, whisk almond flour, cocoa powder, sweetener, baking powder, and salt.
  3. Mix wet ingredients: In another bowl, whisk eggs, melted butter, almond milk, and vanilla.
  4. Combine: Pour wet mixture into dry and stir until smooth. The batter will be slightly thick.
  5. Cook: Lightly grease your waffle iron. Pour in batter (about 1/2–2/3 cup per waffle, depending on size) and cook until set and crisp — usually 3–4 minutes.
  6. Serve: Top with sugar-free whipped cream, fresh berries, or a drizzle of sugar-free chocolate syrup.

Pro Tip: Add 2 tbsp of sugar-free chocolate chips to the batter for extra decadence.
