Keto Chocolate Avocado Brownies
Ingredients:
- 2 ripe avocados
- 3 large eggs
- 1/2 cup coconut flour
- 1/2 cup cocoa powder
- 1/2 cup granulated erythritol or preferred keto sweetener
- 1/2 cup sugar-free dark chocolate chips
- 1/4 cup coconut oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
- Prepare the Avocados: Scoop the flesh of the avocados into a blender or food processor. Blend until smooth and creamy.
- Mix Wet Ingredients: Add the eggs, melted coconut oil, and vanilla extract to the avocado mixture. Blend again until well combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the coconut flour, cocoa powder, erythritol, baking powder, and salt.
- Mix Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until a thick batter forms.
- Add Chocolate Chips: Fold in the sugar-free dark chocolate chips.
- Bake: Pour the batter into the prepared baking pan and spread it out evenly. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Serve: Allow the brownies to cool in the pan before cutting into squares. Enjoy!
