Keto Chicken Cheese Bake

Ingredients:
- 2 lbs (900g) chicken breast or thighs, boneless and skinless
- 1 cup (240ml) heavy cream
- 1 cup (100g) shredded cheddar cheese
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (50g) grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 cup (120ml) chicken broth
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Chicken: Season the chicken breasts or thighs with salt, pepper, paprika, dried oregano, and dried basil.
- Sear the Chicken: In a large skillet, heat olive oil over medium heat. Sear the chicken on both sides until golden brown, about 3-4 minutes per side. It doesn’t need to be cooked through as it will finish cooking in the oven. Remove the chicken from the skillet and set aside.
- Make the Sauce: In the same skillet, add minced garlic and cook for about 1 minute until fragrant. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer and let it cook for a few minutes until it starts to thicken slightly.
- Combine Cheeses: Stir in the shredded cheddar, mozzarella, and Parmesan cheeses until melted and well combined. Taste and adjust seasoning with salt and pepper if needed.
- Assemble the Bake: Place the seared chicken in a baking dish. Pour the cheese sauce over the chicken, making sure it’s evenly covered.
- Bake: Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
- Garnish and Serve: Garnish with chopped fresh parsley if desired. Serve hot.
