Keto Chef Salad

Ingredients:

  • Mixed greens (lettuce, spinach, arugula, etc.) – 2 cups
  • Cooked chicken breast – 1/2 cup, diced
  • Cooked bacon – 2 slices, crumbled
  • Hard-boiled eggs – 2, sliced
  • Cucumber – 1/2, sliced
  • Avocado – 1/2, diced
  • Cherry tomatoes – 1/4 cup, halved
  • Cheddar cheese – 1/4 cup, shredded
  • Red onion – 2 tbsp, thinly sliced
  • Olives – 1/4 cup, sliced
  • Ranch dressing or keto-friendly dressing – 2 tbsp
  • Salt and pepper – to taste

Instructions:

  1. Prepare the veggies and protein: Slice the cucumber, cherry tomatoes, and red onion. Dice the cooked chicken, slice the hard-boiled eggs, and crumble the cooked bacon.
  2. Assemble the salad: In a large bowl, layer the mixed greens as the base. Add the chicken, bacon, eggs, avocado, cucumber, tomatoes, cheese, and olives.
