Keto Cheesy Garlic Zucchini Steaks

Ingredients:

  • 4 medium zucchinis, sliced into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Zucchini: Arrange the zucchini slices in a single layer on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat evenly.
  3. Bake the Zucchini: Bake in the preheated oven for 10 minutes, until the zucchini starts to soften.
  4. Prepare the Garlic Mixture: While the zucchini is baking, mix the minced garlic with a little more olive oil (about 1 tbsp) in a small bowl.
  5. Add the Cheese: After the initial baking time, remove the zucchini from the oven. Brush each slice with the garlic mixture. Sprinkle with grated Parmesan cheese and shredded mozzarella cheese.
  6. Season: Sprinkle the dried oregano and basil over the zucchini slices.
  7. Bake Again: Return the zucchini to the oven and bake for an additional 10-15 minutes, until the cheese is melted and bubbly and the zucchini is tender.
  8. Garnish: Remove from the oven and let cool slightly. Garnish with fresh parsley, if desired.
  9. Serve: Serve warm as a side dish or a delicious keto-friendly snack!
