Keto Cheesesteak Roll-Ups

Ingredients:

  • 1 lb (450g) thinly sliced beef (ribeye, sirloin, or flank steak)
  • 1 tablespoon olive oil
  • 1/2 onion, thinly sliced
  • 1 bell pepper, thinly sliced (optional)
  • 4 oz cream cheese, softened
  • 1 cup shredded provolone cheese (or cheese of choice)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Cook the Beef:
    • Heat the olive oil in a large skillet over medium-high heat.
    • Add the thinly sliced beef to the skillet and cook until browned, about 5-7 minutes. Season with salt, pepper, and garlic powder.
    • Remove the beef from the skillet and set it aside.
  2. Sauté the Vegetables:
    • In the same skillet, add the sliced onions (and bell peppers, if using). Sauté until softened, about 3-4 minutes.
  3. Make the Cream Cheese Mixture:
    • In a small bowl, combine the softened cream cheese and shredded provolone cheese. Stir until smooth and well combined.
  4. Assemble the Roll-Ups:
    • Lay the cooked beef slices on a flat surface.
    • Spread a small amount of the cream cheese mixture onto each slice of beef.
    • Add a few pieces of sautéed onions and peppers on top.
  5. Roll It Up:
    • Carefully roll up each beef slice with the filling inside, securing it tightly.
  6. Serve:
    • Arrange the roll-ups on a plate. Garnish with fresh parsley if desired.
    • Serve immediately or store in the refrigerator for a make-ahead meal.
