Keto Cheese Buns

Ingredients:

  • 2 cups almond flour
  • 1 ½ cups shredded mozzarella cheese (preferably full-fat)
  • 2 oz cream cheese (softened)
  • 2 large eggs
  • 1 tsp baking powder
  • ½ tsp garlic powder (optional for extra flavor)
  • 1 tbsp butter (melted)
  • Salt to taste
  • Optional: Herbs like oregano or thyme for extra flavor

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.
  2. Melt the Cheese: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth.
  3. Mix Dry Ingredients: In a separate bowl, whisk together almond flour, baking powder, garlic powder (if using), and a pinch of salt.
  4. Combine Wet Ingredients: To the melted cheese mixture, add the eggs and melted butter. Mix everything together until smooth and combined.
  5. Add Dry to Wet: Gradually add the dry mixture to the wet ingredients. Stir until everything is fully incorporated and you have a dough-like consistency. It may be slightly sticky, but that’s fine.
  6. Shape the Buns: Divide the dough into 6-8 equal portions, depending on the size you prefer for your buns. Roll them into balls and place them on the prepared baking sheet. Flatten each ball slightly to form a bun shape.
  7. Bake: Bake the buns in the preheated oven for 15-20 minutes or until they are golden brown on top and cooked through.
  8. Cool and Serve: Let the buns cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.

Tips:

  • For an extra cheesy flavor, you can sprinkle a little shredded cheese on top of each bun before baking.
  • These buns are perfect as a side for your favorite keto meals or even for a keto sandwich!
