Keto Cheese Buns

Ingredients:
- 2 cups almond flour
- 1 ½ cups shredded mozzarella cheese (preferably full-fat)
- 2 oz cream cheese (softened)
- 2 large eggs
- 1 tsp baking powder
- ½ tsp garlic powder (optional for extra flavor)
- 1 tbsp butter (melted)
- Salt to taste
- Optional: Herbs like oregano or thyme for extra flavor
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.
- Melt the Cheese: In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave in 30-second intervals, stirring between each, until the cheese is fully melted and smooth.
- Mix Dry Ingredients: In a separate bowl, whisk together almond flour, baking powder, garlic powder (if using), and a pinch of salt.
- Combine Wet Ingredients: To the melted cheese mixture, add the eggs and melted butter. Mix everything together until smooth and combined.
- Add Dry to Wet: Gradually add the dry mixture to the wet ingredients. Stir until everything is fully incorporated and you have a dough-like consistency. It may be slightly sticky, but that’s fine.
- Shape the Buns: Divide the dough into 6-8 equal portions, depending on the size you prefer for your buns. Roll them into balls and place them on the prepared baking sheet. Flatten each ball slightly to form a bun shape.
- Bake: Bake the buns in the preheated oven for 15-20 minutes or until they are golden brown on top and cooked through.
- Cool and Serve: Let the buns cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely.
Tips:
- For an extra cheesy flavor, you can sprinkle a little shredded cheese on top of each bun before baking.
