Keto Cauliflower Mac and Cheese

Ingredients:

  • 1 medium head of cauliflower, cut into bite-sized florets
  • 1 cup shredded cheddar cheese
  • 2 oz cream cheese
  • 1/4 cup heavy cream
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • 1/2 tsp mustard powder (optional, for extra flavor)
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese (optional for topping)

Instructions:

  1. Cook the Cauliflower:
    • Bring a large pot of salted water to boil.
    • Add cauliflower florets and cook for about 5 minutes, until just tender.
    • Drain well and pat dry with paper towels (important to avoid watery sauce).
  2. Make the Cheese Sauce:
    • In a large skillet over medium heat, melt butter.
    • Add cream cheese and heavy cream, stirring until smooth.
    • Stir in garlic powder, mustard powder (if using), salt, and pepper.
    • Add shredded cheddar cheese and stir until fully melted into a creamy sauce.
  3. Combine:
    • Add the cooked cauliflower to the cheese sauce.
    • Stir gently to coat all the florets.
  4. Optional — Bake for Extra Flavor:
    • Preheat your oven to 400°F (200°C).
    • Transfer the cheesy cauliflower to a baking dish.
    • Sprinkle Parmesan cheese over the top.
    • Bake for about 10–15 minutes, until golden and bubbly.
  5. Serve hot and enjoy!
