Keto Cauliflower Mac and Cheese

Ingredients:
- 1 medium head of cauliflower, cut into bite-sized florets
- 1 cup shredded cheddar cheese
- 2 oz cream cheese
- 1/4 cup heavy cream
- 2 tbsp butter
- 1/2 tsp garlic powder
- 1/2 tsp mustard powder (optional, for extra flavor)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional for topping)
Instructions:
- Cook the Cauliflower:
- Bring a large pot of salted water to boil.
- Add cauliflower florets and cook for about 5 minutes, until just tender.
- Drain well and pat dry with paper towels (important to avoid watery sauce).
- Make the Cheese Sauce:
- In a large skillet over medium heat, melt butter.
- Add cream cheese and heavy cream, stirring until smooth.
- Stir in garlic powder, mustard powder (if using), salt, and pepper.
- Add shredded cheddar cheese and stir until fully melted into a creamy sauce.
- Combine:
- Add the cooked cauliflower to the cheese sauce.
- Stir gently to coat all the florets.
- Optional — Bake for Extra Flavor:
- Preheat your oven to 400°F (200°C).
- Transfer the cheesy cauliflower to a baking dish.
- Sprinkle Parmesan cheese over the top.
- Bake for about 10–15 minutes, until golden and bubbly.
- Serve hot and enjoy!
