Keto Cauliflower Cutlet

Ingredients:
- 1 medium cauliflower (steamed & mashed)
- 1/2 cup grated cheese (cheddar or mozzarella)
- 1 egg
- 1/4 cup almond flour (or coconut flour)
- 1/2 tsp garlic powder
- Salt & pepper to taste
- 1/2 tsp chili flakes (optional)
- 1 tbsp chopped fresh coriander or parsley
- Oil or ghee for shallow frying
Instructions:
- Steam cauliflower until soft. Mash it well and squeeze out excess water using a clean cloth or strainer.
- In a bowl, mix mashed cauliflower, cheese, egg, almond flour, garlic powder, salt, pepper, and chili flakes.
- Add chopped coriander and mix everything into a dough-like mixture.
- Shape into small cutlets/patties.
- Heat a non-stick pan with a little oil/ghee. Shallow fry cutlets on medium heat until golden brown and crisp on both sides.
- Serve hot with keto-friendly dip or Greek yogurt!
