Ingredients
For the Crust:
- 1 medium head of cauliflower (about 4 cups riced)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour (optional for added firmness)
- 1 large egg
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt

- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese

Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet or pizza stone with parchment paper.
- Prepare the Cauliflower: Remove the leaves and stem from the cauliflower, and cut it into florets. Place the florets in a food processor and pulse until finely riced. Alternatively, you can use pre-riced cauliflower.
- Cook the Cauliflower: Transfer the riced cauliflower to a microwave-safe bowl and microwave for 5-8 minutes until soft. Let it cool slightly, then place it in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible — this step is crucial for a firm crust.
- Make the Crust Mixture: In a large bowl, combine the squeezed cauliflower, mozzarella cheese, Parmesan cheese, almond flour (if using), egg, oregano, garlic powder, and salt. Mix until well combined.
- Form the Crust: Place the cauliflower mixture onto the prepared baking sheet or pizza stone. Using your hands, press the mixture into a 1/4-inch thick circle or rectangle, shaping it like a pizza crust.
- Bake the Crust: Bake the crust in the preheated oven for 20-25 minutes, or until it’s golden brown and firm.
- Add Toppings: Remove the crust from the oven and spread the tomato sauce over it. Sprinkle the shredded mozzarella and Parmesan cheeses on top, then add your desired toppings.
- Bake Again: Return the pizza to the oven and bake for an additional 10-12 minutes, or until the cheese is melted and bubbly.
