Keto Cauliflower Crust Pizza

Ingredients:
For the Crust:
- 1 large head of cauliflower, riced
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
For the Toppings:
- 1/2 cup sugar-free pizza sauce
- 1 cup shredded mozzarella cheese
- Your choice of keto-friendly toppings (pepperoni, mushrooms, bell peppers, olives, etc.)
Instructions:
- Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare Cauliflower: Rice the cauliflower using a food processor or a grater until it resembles rice. Place the riced cauliflower in a microwave-safe bowl and microwave on high for about 4-5 minutes until softened. Let it cool slightly.
- Remove Moisture: Once the cauliflower is cool enough to handle, place it in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step is crucial to ensure a crispy crust.
- Mix Ingredients: In a large bowl, combine the drained cauliflower, 1 cup of mozzarella cheese, Parmesan cheese, egg, Italian seasoning, garlic powder, salt, and pepper. Mix until well combined.
- Form the Crust: Transfer the cauliflower mixture to the prepared baking sheet and press it into a circle or rectangle, about 1/4 inch thick. Make sure the edges are a little thicker to create a crust.
- Bake the Crust: Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown and crispy.
- Add Toppings: Remove the crust from the oven and spread the pizza sauce evenly over the crust. Sprinkle with the remaining 1 cup of mozzarella cheese and add your desired toppings.
- Bake Again: Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the toppings are cooked through.
- Serve: Let the pizza cool for a few minutes before slicing and serving.
