Keto Butter Pie

Ingredients:
- 1 1/2 cups almond flour
- 1/4 cup melted butter
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
Instructions:
- Preheat your oven to 350°F (175°C).
- Mix almond flour, melted butter, powdered erythritol, and vanilla extract in a bowl until well combined.
- Press the mixture into a pie dish to form a crust.
- Bake the crust for 10-12 minutes, or until golden brown.
- Let the crust cool completely before adding the filling.
Filling:
Ingredients:
- 1/2 cup unsalted butter, softened
- 1 cup heavy whipping cream
- 1/2 cup powdered erythritol
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions:
- In a large bowl, beat the softened butter until creamy and smooth.
- Gradually add the powdered erythritol and continue to beat until light and fluffy.
- Add the vanilla extract and salt, and beat until well combined.
- In a separate bowl, whip the heavy whipping cream until stiff peaks form.
- Gently fold the whipped cream into the butter mixture until fully combined.
- Spread the filling evenly over the cooled crust.
- Refrigerate the pie for at least 2 hours, or until set.
Optional Toppings:
- Shaved dark chocolate (sugar-free)
- Chopped nuts
- Fresh berries (optional and in moderation for keto)
Serving:
- Once the pie is set, slice and serve chilled.
- Store any leftovers in the refrigerator.
