Keto Butter Pie

Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup melted butter
  • 1/4 cup powdered erythritol
  • 1 tsp vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Mix almond flour, melted butter, powdered erythritol, and vanilla extract in a bowl until well combined.
  3. Press the mixture into a pie dish to form a crust.
  4. Bake the crust for 10-12 minutes, or until golden brown.
  5. Let the crust cool completely before adding the filling.

Filling:

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered erythritol
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions:

  1. In a large bowl, beat the softened butter until creamy and smooth.
  2. Gradually add the powdered erythritol and continue to beat until light and fluffy.
  3. Add the vanilla extract and salt, and beat until well combined.
  4. In a separate bowl, whip the heavy whipping cream until stiff peaks form.
  5. Gently fold the whipped cream into the butter mixture until fully combined.
  6. Spread the filling evenly over the cooled crust.
  7. Refrigerate the pie for at least 2 hours, or until set.

Optional Toppings:

  • Shaved dark chocolate (sugar-free)
  • Chopped nuts
  • Fresh berries (optional and in moderation for keto)

Serving:

  1. Once the pie is set, slice and serve chilled.
  2. Store any leftovers in the refrigerator.
