Keto Blueberry Yogurt Protein Bites
Ingredients:
- 1 cup unsweetened Greek yogurt (or coconut yogurt for dairy-free)
- 1/2 cup fresh or frozen blueberries
- 1/4 cup almond flour
- 2 tbsp keto-friendly sweetener (like erythritol or stevia)
- 1 scoop vanilla or unflavored protein powder
- 1/2 tsp vanilla extract (optional)
Instructions:
- Prepare the Mixture:
- In a bowl, mix the Greek yogurt, protein powder, almond flour, sweetener, and vanilla extract until smooth.
- Add Blueberries:
- Gently fold in the blueberries, ensuring they are evenly distributed.
- Shape the Bites:
- Using a spoon or small scoop, form the mixture into bite-sized balls. If it’s too sticky, chill the mixture for 10–15 minutes to firm up.
- Freeze:
- Place the bites on a parchment-lined tray and freeze for 1–2 hours until solid.
