Keto Blueberry Yogurt Protein Bites

Ingredients:

  • 1 cup unsweetened Greek yogurt (or coconut yogurt for dairy-free)
  • 1/2 cup fresh or frozen blueberries
  • 1/4 cup almond flour
  • 2 tbsp keto-friendly sweetener (like erythritol or stevia)
  • 1 scoop vanilla or unflavored protein powder
  • 1/2 tsp vanilla extract (optional)

Instructions:

  1. Prepare the Mixture:
    • In a bowl, mix the Greek yogurt, protein powder, almond flour, sweetener, and vanilla extract until smooth.
  2. Add Blueberries:
    • Gently fold in the blueberries, ensuring they are evenly distributed.
  3. Shape the Bites:
    • Using a spoon or small scoop, form the mixture into bite-sized balls. If it’s too sticky, chill the mixture for 10–15 minutes to firm up.
  4. Freeze:
    • Place the bites on a parchment-lined tray and freeze for 1–2 hours until solid.
  5. Serve and Store:
    • Enjoy these bites straight from the freezer or let them soften slightly before eating.
    • Store in an airtight container in the freezer for up to 2 weeks.
