Ingredients:
– 2 cups almond flour
– 1/4 cup of your favorite keto-friendly sweetener, such as granulated erythritol
– 2 teaspoons baking powder
– 1/4 teaspoon salt
– 4 tablespoons unsalted butter, melted
– 4 large eggs
– 1/4 cup unsweetened almond milk
– 1 teaspoon vanilla extract
– 1 cup fresh blueberries

Instructions:

  1. You should coat a doughnut pan with nonstick cooking spray and preheat your oven to 350°F (175°C).
  2. Combine the almond flour, erythritol, baking soda, and salt in a sizable mixing basin. Thoroughly combine to ensure that the dry ingredients are distributed evenly.
  3. Melted butter, eggs, almond milk, and vanilla extract should all be thoroughly blended in a different bowl.
  4. In the basin containing the dry ingredients, add the wet components. Stir until a smooth batter forms.
  5. Don’t bruise the fresh blueberries as you gently fold them in.
  6. Spoon the batter into the greased donut pan, filling each cavity about three-quarters full.
  7. Place the donut pan in the preheated oven and bake for approximately 15-20 minutes, or until the donuts turn golden brown and a toothpick inserted into the center comes out clean.
  8. Once baked, remove the donuts from the oven and let them cool in the pan for a few minutes.
  9. Carefully transfer the donuts to a wire rack to cool completely.
  10. Optional: You can glaze the donuts with a keto-friendly glaze, made by mixing powdered erythritol with a little water or unsweetened almond milk.
  11. Serve and enjoy these delectable keto blueberry donuts!
