Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease a donut pan or use a non-stick silicone mold.
  2. Prepare the Donut Batter:
    • In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
    • In a separate bowl, beat the eggs, then add the almond milk, melted butter (or coconut oil), and vanilla extract. Mix well.
    • Combine the wet ingredients with the dry ingredients, mixing until fully incorporated.
    • Gently fold in the blueberries. Be careful not to overmix to avoid breaking the blueberries too much.
  3. Fill the Donut Pan:
    • Spoon the batter into the donut pan, filling each cavity about 2/3 full. Smooth the tops with a spatula if needed.
  4. Bake the Donuts:
    • Bake in the preheated oven for about 15-18 minutes, or until a toothpick inserted into the center comes out clean and the donuts are golden brown.
  5. Cool the Donuts:
    • Let the donuts cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  6. Prepare the Glaze (Optional):
    • While the donuts are cooling, you can prepare the glaze. In a small bowl, mix the powdered erythritol, almond milk, and vanilla extract until smooth.
    • Drizzle the glaze over the cooled donuts or dip the tops of the donuts into the glaze.
  7. Serve and Enjoy:
    • Once the glaze has set (if using), your keto blueberry donuts are ready to enjoy!

Tips:

  • Sweetener Adjustments: Feel free to adjust the sweetness according to your taste or substitute with other keto-friendly sweeteners.
  • Blueberries: If using frozen blueberries, do not thaw them to prevent excess moisture in the batter.
  • Storage: Store leftover donuts in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week. They can also be frozen for longer storage.

Enjoy your homemade keto blueberry donuts!
