Keto Bliss Balls

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsweetened shredded coconut (plus extra for rolling)
  • 1/2 cup natural almond butter (or peanut butter, if preferred)
  • 1/4 cup sugar-free sweetener (like erythritol or monk fruit, adjust to taste)
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free dark chocolate chips (optional)
  • Pinch of salt

Instructions:

  1. Mix Dry Ingredients: In a mixing bowl, combine the almond flour, cocoa powder, shredded coconut, sugar-free sweetener, and a pinch of salt. Stir well to combine.
  2. Add Wet Ingredients: Add the almond butter and vanilla extract to the dry mixture. If you’re using chocolate chips, add them in now. Mix until the ingredients are well combined. The mixture should be thick and sticky.
  3. Form Balls: Use your hands to form the mixture into small balls, about 1 inch in diameter. If the mixture is too sticky, you can wet your hands slightly to help with shaping.
  4. Coat with Coconut: Roll the balls in additional shredded coconut to coat them if desired.
  5. Chill: Place the bliss balls on a baking sheet lined with parchment paper. Refrigerate for about 30 minutes to firm up.
  6. Store: Once chilled, transfer the bliss balls to an airtight container. They can be stored in the refrigerator for up to a week or frozen for longer storage.
