Ingredients:
For the Donuts:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- ¼ cup granulated erythritol or other keto sweetener
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ¼ cup unsweetened almond milk (or other low-carb milk alternative)
- 2 tbsp melted coconut oil or butter
- 1 tsp vanilla extract
For the Frying:
- Coconut oil, for frying (enough to fill a pan with about 1-2 inches of oil)
For the Glaze (optional):
- ¼ cup powdered erythritol
- 1-2 tbsp heavy cream
- ½ tsp vanilla extract

Instructions:
- Prepare the Donut Dough:
- In a medium bowl, mix the almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk together the eggs, almond milk, melted coconut oil (or butter), and vanilla extract.
- Combine the wet and dry ingredients, stirring until you have a thick, smooth dough.
- Shape the Donuts:
- On a piece of parchment paper or a silicone mat, roll out the dough to about ¼-inch thickness. You can also use your hands to shape the donuts.
- Cut out donut shapes using a donut cutter or a round cutter and a smaller cutter for the center. If you don’t have a donut cutter, you can use a glass for the outer ring and a bottle cap for the center.
- Heat the Oil:
- In a deep skillet or frying pan, heat coconut oil over medium heat. You’ll want the oil to reach about 350°F (175°C). You can test the temperature by dropping a small piece of dough into the oil; if it bubbles and rises, the oil is ready.
- Fry the Donuts:
- Carefully place the donuts into the hot oil, being cautious not to overcrowd the pan.
- Fry for about 1-2 minutes per side, or until golden brown and crispy.
- Use a slotted spoon to remove the donuts and place them on a paper towel-lined plate to drain excess oil.
- Prepare the Glaze (Optional):
- In a small bowl, mix the powdered erythritol with 1-2 tbsp of heavy cream and vanilla extract until smooth. Adjust the consistency with more cream if necessary.
- Glaze the Donuts (Optional):
- Dip the cooled donuts into the glaze or drizzle it over the top.
- Serve:
