Keto Berry Ice-cream

Ingredients:

  • 2 cups mixed berries (such as strawberries, blueberries, and raspberries)
  • 1 cup heavy cream
  • 1 cup unsweetened almond milk (or any low-carb milk substitute)
  • 1/2 cup powdered erythritol (or your preferred keto-friendly sweetener, adjusted to taste)
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice (optional, for a touch of tartness)
  • 1/2 cup Greek yogurt (full-fat, unsweetened)

Instructions:

  1. Prepare the Berries:
    • If using frozen berries, let them thaw slightly. If using fresh berries, wash them thoroughly.
    • Blend the berries in a food processor or blender until smooth. You can strain them through a fine mesh sieve to remove seeds if desired.
  2. Mix Ingredients:
    • In a large mixing bowl, combine the berry puree with the heavy cream, almond milk, powdered erythritol, vanilla extract, and lemon juice (if using). Mix well.
  3. Add Greek Yogurt:
    • Stir in the Greek yogurt until fully incorporated.
  4. Chill the Mixture:
    • Cover the mixture and refrigerate for about 1-2 hours, or until it is well chilled.
  5. Freeze:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
  6. Harden:
    • Transfer the churned ice cream to a lidded container and freeze for at least 2 hours to firm up.
  7. Serve:

  • No Ice Cream Maker? You can freeze the mixture in a lidded container and stir it every 30 minutes for a few hours to break up ice crystals and achieve a creamier texture.
