Keto Berry Bread Pudding

Ingredients:

  • 4 cups of keto-friendly bread (like almond flour bread or low-carb bread), cubed
  • 1 cup of mixed berries (such as strawberries, blueberries, and raspberries)
  • 4 large eggs
  • 1 cup of unsweetened almond milk (or other low-carb milk)
  • 1/2 cup of heavy cream
  • 1/4 cup of erythritol or other keto-friendly sweetener
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • Optional: 1/4 cup chopped nuts for added texture

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare Bread: Cube the keto-friendly bread and spread it in a greased baking dish.
  3. Mix Wet Ingredients: In a bowl, whisk together the eggs, almond milk, heavy cream, erythritol, vanilla extract, cinnamon, and salt until well combined.
  4. Add Berries: Gently fold the mixed berries into the bread cubes.
  5. Combine: Pour the egg mixture over the bread and berries. Stir gently to ensure the bread cubes are well coated.
  6. Bake: Bake in the preheated oven for about 35-45 minutes, or until the pudding is set and the top is golden brown.
  7. Cool: Allow it to cool slightly before serving. It’s delicious warm or at room temperature.
  8. Optional: Top with a sprinkle of nuts or a dollop of whipped cream if desired.
