KETO BEEF STROGANOFF

Ingredients

  • For the Beef:
    • 1 lb (450g) beef sirloin or tenderloin, thinly sliced
    • 2 tablespoons olive oil or butter
    • Salt and pepper to taste
  • For the Sauce:
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 8 oz (225g) mushrooms, sliced (button or cremini work well)
    • 1 cup beef broth (preferably low-sodium)
    • 1 tablespoon Worcestershire sauce (check for sugar-free)
    • 1 cup heavy cream
    • 1 tablespoon Dijon mustard (optional)
    • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Beef:
    • In a large skillet, heat the olive oil or butter over medium-high heat.
    • Season the beef with salt and pepper. Add it to the skillet in a single layer and sear until browned (about 2-3 minutes per side). Remove the beef from the skillet and set aside.
  2. Sauté Vegetables:
    • In the same skillet, add the chopped onion and cook until translucent (about 3-4 minutes).
    • Add the garlic and mushrooms, cooking until the mushrooms are browned and have released their moisture (about 5-6 minutes).
  3. Make the Sauce:
    • Pour in the beef broth and Worcestershire sauce, scraping any browned bits from the bottom of the pan.
    • Let it simmer for a few minutes to reduce slightly.
    • Stir in the heavy cream and Dijon mustard (if using). Bring to a gentle simmer and cook for another 3-5 minutes until the sauce thickens.
  4. Combine:
    • Return the cooked beef to the skillet, stirring to coat it in the sauce. Cook for an additional 2-3 minutes to heat through.
  5. Serve:
    • Garnish with fresh parsley and serve hot. This dish pairs well with cauliflower rice or zoodles (zucchini noodles) for a complete meal.
