KETO BEEF STROGANOFF
Ingredients
- For the Beef:
- 1 lb (450g) beef sirloin or tenderloin, thinly sliced
- 2 tablespoons olive oil or butter
- Salt and pepper to taste
- For the Sauce:
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225g) mushrooms, sliced (button or cremini work well)
- 1 cup beef broth (preferably low-sodium)
- 1 tablespoon Worcestershire sauce (check for sugar-free)
- 1 cup heavy cream
- 1 tablespoon Dijon mustard (optional)
- Fresh parsley, chopped (for garnish)

Instructions
- Cook the Beef:
- In a large skillet, heat the olive oil or butter over medium-high heat.
- Season the beef with salt and pepper. Add it to the skillet in a single layer and sear until browned (about 2-3 minutes per side). Remove the beef from the skillet and set aside.
- Sauté Vegetables:
- In the same skillet, add the chopped onion and cook until translucent (about 3-4 minutes).
- Add the garlic and mushrooms, cooking until the mushrooms are browned and have released their moisture (about 5-6 minutes).
- Make the Sauce:
- Pour in the beef broth and Worcestershire sauce, scraping any browned bits from the bottom of the pan.
- Let it simmer for a few minutes to reduce slightly.
- Stir in the heavy cream and Dijon mustard (if using). Bring to a gentle simmer and cook for another 3-5 minutes until the sauce thickens.
- Combine:
- Return the cooked beef to the skillet, stirring to coat it in the sauce. Cook for an additional 2-3 minutes to heat through.
- Serve:
- Garnish with fresh parsley and serve hot. This dish pairs well with cauliflower rice or zoodles (zucchini noodles) for a complete meal.
