Keto Bacon Muffins

Ingredients:
- 6 slices bacon, chopped
- 1 cup almond flour
- 1/2 cup shredded cheddar cheese
- 4 large eggs
- 1/4 cup heavy cream
- 1/2 tsp baking powder
- 1/2 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp chopped chives or green onions (optional, for extra flavor)

Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
- Cook the Bacon:
- In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and drain on paper towels. Leave a little bacon fat in the skillet for extra flavor if desired.
- Prepare the Batter:
- In a large bowl, combine the almond flour, shredded cheddar cheese, baking powder, garlic powder, onion powder, salt, and pepper.
- In a separate bowl, whisk together the eggs and heavy cream until well combined.
- Pour the egg mixture into the dry ingredients and mix until you have a smooth batter.
- Add Bacon:
- Fold the crispy bacon pieces into the batter. If you’re using chives or green onions, fold them in as well.
- Fill Muffin Tin:
- Spoon the batter evenly into the muffin tin cups, filling each about 3/4 full.
- Bake:
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
- Cool and Serve:
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
