Keto Bacon Muffins

Ingredients:

  • 6 slices bacon, chopped
  • 1 cup almond flour
  • 1/2 cup shredded cheddar cheese
  • 4 large eggs
  • 1/4 cup heavy cream
  • 1/2 tsp baking powder
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper, to taste
  • 1 tbsp chopped chives or green onions (optional, for extra flavor)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it well.
  2. Cook the Bacon:
    • In a skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet and drain on paper towels. Leave a little bacon fat in the skillet for extra flavor if desired.
  3. Prepare the Batter:
    • In a large bowl, combine the almond flour, shredded cheddar cheese, baking powder, garlic powder, onion powder, salt, and pepper.
    • In a separate bowl, whisk together the eggs and heavy cream until well combined.
    • Pour the egg mixture into the dry ingredients and mix until you have a smooth batter.
  4. Add Bacon:
    • Fold the crispy bacon pieces into the batter. If you’re using chives or green onions, fold them in as well.
  5. Fill Muffin Tin:
    • Spoon the batter evenly into the muffin tin cups, filling each about 3/4 full.
  6. Bake:
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean and the tops are golden brown.
  7. Cool and Serve:
    • Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Enjoy your keto bacon muffins warm or at room temperature! They’re great on their own or with a side of avocado or a keto-friendly dipping sauce.
