Keto Apple Fritters

Ingredients

For the fritters:

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup erythritol (or your preferred keto sweetener)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 3 large eggs
  • 1/2 cup unsweetened applesauce (or finely chopped apples, keep in mind this will add some carbs)
  • 1 tsp vanilla extract
  • Oil for frying (coconut or avocado oil works well)

For the glaze:

  • 1/2 cup powdered erythritol
  • 1-2 tbsp almond milk (or water)
  • 1/2 tsp vanilla extract

Instructions

  1. Prepare the batter:
    • In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
    • In another bowl, whisk the eggs, applesauce, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
  2. Heat the oil:
    • In a deep skillet or pot, heat about 1 inch of oil over medium heat until it reaches 350°F (175°C).
  3. Fry the fritters:
    • Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
    • Fry for about 2-3 minutes on each side, or until golden brown.
    • Remove the fritters and place them on paper towels to drain excess oil.
  4. Make the glaze:
    • In a small bowl, whisk together the powdered erythritol, almond milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or sweetener as needed.
  5. Glaze the fritters:
    • Once the fritters have cooled slightly, drizzle the glaze over them or dip them in the glaze.
  6. Serve:
