Ingredients
For the fritters:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol (or your preferred keto sweetener)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 3 large eggs
- 1/2 cup unsweetened applesauce (or finely chopped apples, keep in mind this will add some carbs)
- 1 tsp vanilla extract
- Oil for frying (coconut or avocado oil works well)
For the glaze:
- 1/2 cup powdered erythritol
- 1-2 tbsp almond milk (or water)
- 1/2 tsp vanilla extract

Instructions
- Prepare the batter:
- In a mixing bowl, combine the almond flour, coconut flour, erythritol, baking powder, cinnamon, and salt.
- In another bowl, whisk the eggs, applesauce, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until well combined.
- Heat the oil:
- In a deep skillet or pot, heat about 1 inch of oil over medium heat until it reaches 350°F (175°C).
- Fry the fritters:
- Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
- Fry for about 2-3 minutes on each side, or until golden brown.
- Remove the fritters and place them on paper towels to drain excess oil.
- Make the glaze:
- In a small bowl, whisk together the powdered erythritol, almond milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or sweetener as needed.
- Glaze the fritters:
- Once the fritters have cooled slightly, drizzle the glaze over them or dip them in the glaze.
