Keto Apple Cider Braised Pork Shoulder

Ingredients:
– 3-4 lbs (about 1.5-2 kg) boneless pork shoulder roast
– 2 tablespoons olive oil
– Salt and pepper to taste
– 1 medium onion, diced
– 2 cloves garlic, minced
– 2 cups unsweetened apple cider
– 1 cup chicken broth (low-sodium)
– 2 teaspoons dried thyme
– 2 teaspoons dried rosemary
– 2 bay leaves
– 1/2 cup heavy cream
– 2 tablespoons butter
– Fresh parsley, for garnish
Instructions:
1. Season the pork shoulder roast generously with salt and pepper.
2. In a large, oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Add the seasoned pork roast and sear it on all sides until it’s nicely browned. Remove the pork from the pot and set it aside.
3. In the same pot, add the diced onion and minced garlic. Sauté until the onion becomes translucent, about 3-4 minutes.
4. Return the seared pork roast to the pot. Pour in the unsweetened apple cider and chicken broth. Add the dried thyme, dried rosemary, and bay leaves.
5. Cover the pot and place it in a preheated oven at 325°F (160°C). Braise the pork for 3-4 hours, or until it becomes tender and easily shreds with a fork. You can also braise it on the stovetop over low heat if preferred.
6. Once the pork is tender, remove it from the pot and shred it using two forks. Set aside.
7. Strain the cooking liquid through a fine-mesh sieve into a separate bowl, discarding any solids.
8. In the pot, melt the butter over medium heat. Pour in the strained cooking liquid and heavy cream. Simmer for about 5-10 minutes, stirring occasionally, until the sauce thickens.
9. Return the shredded pork to the pot, coating it with the creamy apple cider sauce. Cook for an additional 5 minutes, allowing the flavors to meld.
10. Serve hot, garnished with fresh parsley.
