Keto Antipasto Sala

Ingredients:

  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/2 cup black olives, sliced
  • 1/2 cup green olives, sliced
  • 1/2 cup artichoke hearts, chopped (optional)
  • 1/2 cup roasted red peppers, sliced
  • 100g salami, chopped
  • 100g pepperoni, chopped
  • 100g mozzarella balls or cubes
  • 1/4 cup red onion, thinly sliced
  • Fresh basil or parsley (optional)

Dressing:

  • 3 tbsp olive oil
  • 1 tbsp red wine vinegar or apple cider vinegar
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • A squeeze of lemon juice (optional)

Instructions:

  1. Chop & Mix: Add all salad ingredients into a large bowl.
  2. Shake the Dressing: Mix all dressing ingredients in a small jar or whisk in a bowl.
  3. Toss & Chill: Pour the dressing over the salad, toss everything well, and let it sit for 10–15 mins in the fridge for flavors to blend.
  4. Serve: Garnish with fresh herbs and enjoy cold!
