Keto Antipasto Sala

Ingredients:
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/2 cup black olives, sliced
- 1/2 cup green olives, sliced
- 1/2 cup artichoke hearts, chopped (optional)
- 1/2 cup roasted red peppers, sliced
- 100g salami, chopped
- 100g pepperoni, chopped
- 100g mozzarella balls or cubes
- 1/4 cup red onion, thinly sliced
- Fresh basil or parsley (optional)
Dressing:
- 3 tbsp olive oil
- 1 tbsp red wine vinegar or apple cider vinegar
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- Salt and pepper to taste
- A squeeze of lemon juice (optional)
Instructions:
- Chop & Mix: Add all salad ingredients into a large bowl.
- Shake the Dressing: Mix all dressing ingredients in a small jar or whisk in a bowl.
- Toss & Chill: Pour the dressing over the salad, toss everything well, and let it sit for 10–15 mins in the fridge for flavors to blend.
- Serve: Garnish with fresh herbs and enjoy cold!
