Keto Almond Berry Nougat Bars

Ingredients

For the Nougat Layer:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup almond butter (or peanut butter if preferred)
  • 1/4 cup powdered erythritol (or another keto-friendly sweetener)
  • 1/4 cup coconut oil
  • 1/4 teaspoon vanilla extract
  • Pinch of salt

For the Berry Layer:

  • 1 cup mixed berries (fresh or frozen, thawed and drained)
  • 1/4 cup chia seeds (for thickening)
  • 1-2 tablespoons erythritol or other keto sweetener, to taste

For the Almond Topping:

  • 1/4 cup sliced almonds

Instructions

  1. Prepare the Nougat Layer:
    1. In a mixing bowl, combine the almond flour, shredded coconut, and powdered erythritol.
    2. Melt the coconut oil and almond butter together in a small saucepan over low heat, stirring until smooth.
    3. Remove from heat and stir in the vanilla extract and a pinch of salt.
    4. Mix the wet ingredients into the dry ingredients until well combined.
    5. Line an 8×8 inch (20×20 cm) baking dish with parchment paper.
    6. Press the nougat mixture evenly into the bottom of the prepared dish.
  2. Prepare the Berry Layer:
    1. In a small saucepan, heat the mixed berries over medium heat until they start to break down and become saucy (about 5-7 minutes).
    2. Stir in the erythritol to sweeten the berry mixture to your taste.
    3. Add chia seeds and cook for an additional 2-3 minutes, stirring frequently, until the mixture thickens and becomes jam-like.
    4. Remove from heat and let cool slightly.
  3. Assemble the Bars:
    1. Pour the berry mixture over the nougat layer and spread it evenly.
    2. Sprinkle the sliced almonds over the top of the berry layer.
  4. Chill and Set:
    1. Refrigerate the bars for at least 2 hours or until firm.
    2. Once set, lift the bars out of the baking dish using the parchment paper and cut into squares or rectangles.
  5. Store and Enjoy:
    • Store the bars in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
