Keto Almond Berry Nougat Bars
Ingredients
For the Nougat Layer:
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/4 cup almond butter (or peanut butter if preferred)
- 1/4 cup powdered erythritol (or another keto-friendly sweetener)
- 1/4 cup coconut oil
- 1/4 teaspoon vanilla extract
- Pinch of salt
For the Berry Layer:
- 1 cup mixed berries (fresh or frozen, thawed and drained)
- 1/4 cup chia seeds (for thickening)
- 1-2 tablespoons erythritol or other keto sweetener, to taste
For the Almond Topping:
- 1/4 cup sliced almonds

Instructions
- Prepare the Nougat Layer:
- In a mixing bowl, combine the almond flour, shredded coconut, and powdered erythritol.
- Melt the coconut oil and almond butter together in a small saucepan over low heat, stirring until smooth.
- Remove from heat and stir in the vanilla extract and a pinch of salt.
- Mix the wet ingredients into the dry ingredients until well combined.
- Line an 8×8 inch (20×20 cm) baking dish with parchment paper.
- Press the nougat mixture evenly into the bottom of the prepared dish.
- Prepare the Berry Layer:
- In a small saucepan, heat the mixed berries over medium heat until they start to break down and become saucy (about 5-7 minutes).
- Stir in the erythritol to sweeten the berry mixture to your taste.
- Add chia seeds and cook for an additional 2-3 minutes, stirring frequently, until the mixture thickens and becomes jam-like.
- Remove from heat and let cool slightly.
- Assemble the Bars:
- Pour the berry mixture over the nougat layer and spread it evenly.
- Sprinkle the sliced almonds over the top of the berry layer.
- Chill and Set:
- Refrigerate the bars for at least 2 hours or until firm.
- Once set, lift the bars out of the baking dish using the parchment paper and cut into squares or rectangles.
- Store and Enjoy:
- Store the bars in an airtight container in the refrigerator for up to 2 weeks or freeze for longer storage.
