Keto Air Fryer Chicken Fajitas

Ingredients:

  • 2 chicken breasts, sliced into thin strips
  • 1 bell pepper, sliced (you can use a mix of colors for a vibrant dish)
  • 1 onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional for some heat)
  • Salt and pepper, to taste
  • Lime wedges (for serving)
  • Fresh cilantro, chopped (for garnish)
  • Low-carb tortillas (optional, for serving)

Instructions:

  1. Preheat your Air Fryer: Set your air fryer to 375°F (190°C) and allow it to heat up while you prepare the ingredients.
  2. Season the Chicken: In a bowl, mix the chicken strips with olive oil, cumin, chili powder, paprika, garlic powder, onion powder, oregano, cayenne pepper (if using), salt, and pepper. Toss well to ensure the chicken is evenly coated with the spices.
  3. Prepare the Veggies: In another bowl, toss the sliced bell pepper and onion with a little bit of olive oil, salt, and pepper.
  4. Air Fry the Chicken and Veggies: Add the seasoned chicken and veggies to the air fryer basket. Spread them out in an even layer to ensure even cooking.
  5. Cook: Air fry the chicken and veggies at 375°F (190°C) for about 15-18 minutes, shaking the basket halfway through to ensure everything cooks evenly.
  6. Serve: Once done, squeeze fresh lime juice over the fajitas and garnish with chopped cilantro.
  7. Enjoy: Serve your chicken fajitas as is for a low-carb meal or wrap them in low-carb tortillas. You can also add a side of guacamole or sour cream if you like!
