Keto Air Fryer Burrito

Ingredients:
- 1 lb (450g) ground beef or chicken
- 1 cup shredded cheddar cheese
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup diced onions
- 1/4 cup sliced black olives (optional)
- 1/4 cup sour cream
- 1 tbsp olive oil
- 1 tbsp taco seasoning (make sure it’s low-carb or homemade)
- 1 package (4-6) low-carb tortilla wraps (store-bought or homemade)
- Salt and pepper to taste

Instructions:
- Cook the Meat:
- Heat olive oil in a skillet over medium heat. Add ground beef or chicken, breaking it up as it cooks.
- Season with taco seasoning, salt, and pepper. Cook until fully browned and cooked through, about 5-7 minutes.
- Drain any excess fat and set the meat aside to cool slightly.
- Assemble the Burritos:
- Warm the low-carb tortillas slightly to make them pliable. This can be done in a dry skillet or microwave.
- Lay out a tortilla on a flat surface. Add a portion of the cooked meat in the center.
- Top with shredded cheese, shredded lettuce, diced tomatoes, onions, and black olives if using.
- Add a dollop of sour cream on top.
- Roll the Burritos:
- Fold the sides of the tortilla over the filling and then roll it up tightly from the bottom. Repeat with remaining tortillas.
- Air Fry the Burritos:
- Preheat your air fryer to 370°F (190°C).
- Brush or spray the burritos lightly with olive oil to help them crisp up.
- Place the burritos in the air fryer basket in a single layer (you may need to do this in batches).
- Cook for 8-10 minutes, turning halfway through, until they are golden and crispy.
- Serve:
- Remove the burritos from the air fryer and let them cool for a minute or two before slicing.
- Serve with extra sour cream, salsa, or guacamole on the side if desired.
