Diabetic Honey Lime Chicken & Avocado Cauliflower Rice Stack

✅ Ingredients

Chicken Marinade

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp lime juice (fresh)
  • 1 tsp honey (just for flavor)
  • 1–2 tsp monk fruit or erythritol (to replace extra honey sweetness)
  • 1 tsp lime zest
  • 1 clove garlic (minced)
  • ½ tsp paprika
  • Salt & pepper

“Rice” Layer

  • 2 cups cauliflower rice
  • 1 tbsp olive oil
  • Pinch salt
  • 1 tbsp chopped cilantro
  • Squeeze of lime

Avocado Layer

  • 1 ripe avocado (diced)
  • 1 tbsp lime juice
  • Pinch salt
  • Optional: diced tomato or red onion (small amount)

👩‍🍳 Instructions

  1. Marinate Chicken
    Mix marinade ingredients and coat chicken. Marinate 20–60 minutes.
  2. Cook Chicken
    Grill or pan-cook 5–6 minutes per side until fully cooked.
    Rest 5 minutes, then slice.
  3. Cook Cauliflower Rice
    Sauté in olive oil 5–7 minutes until tender but not mushy.
    Add lime juice and cilantro.
  4. Prepare Avocado Mix
    Toss avocado with lime and salt.
  5. Assemble the Stack
    Use a small bowl or ring mold:
    • Bottom: cauliflower rice
    • Middle: sliced chicken
    • Top: avocado
    Press gently and flip onto plate.
