Homemade sweet potato and banana muffins

I had 1 banana and 2 small sweet potatoes looking a bit sad. I also had 1 pot of 500g soya yoghurt, they don’t have plastic tops anymore so the foil lid had been pierced by a tin of chopped tomatoes whilst in my shopping bag
Here’s how to make them.
You will need a food processor and a muffin mould 6 cup
220g of grated sweet potato – you can use carrot
250g white self raising flour
150g sugar
2 tsp baking powder
1 tsp salt
2 tsp cinnamon
100g plant based ‘butter’
1 ripe banana
300g soya yoghurt – I used plain but a flavoured one will work
2 tbs vinegar
60g dried fruit – I used raisins and cranberrys
Put all ingredients, with the exception of the dried fruit, into a food processor and zap into a smooth paste. Fold in dried fruit.
Now divided between the 6 muffin moulds. Cook in a Preheat oven 180C for 30 – 35 mins. You know they are cooked when you insert a cocktail stick and it comes out dry
