Ingredients:
Shortcrust pastry (ready-made or homemade)
Cheddar cheese (grated)
Milk
Butter
Plain flour
Salt & black pepper
Optional: mustard or a pinch of paprika
Oven chips

Method:
1. Line a pie dish with shortcrust pastry and blind bake until lightly golden.
2. Melt butter in a pan, stir in flour to make a roux, then gradually whisk in milk to form a thick white sauce.
3. Remove from heat, add grated cheese, seasoning, and optional mustard; mix until smooth and cheesy.
4. Pour the cheese filling into the pastry case and bake until set with a golden, lightly toasted top.
