homemade (pita, tzatziki, fries, tofu)

Ingredients
1c warm water (110 F)
1tsp sugar
2 1/4tsp active dry yeast
2 1/2c organic unbleached all purpose flour
2 tbsp olive oil
1 1/2tsp sea salt

  1. In bowl, add warm water, sugar, active dry yeast and 1 cup of flour and mix. Let it sit for about 15 minutes till the yeast activates. This mixture will bubble.
  2. Add 2 tablespoon of olive oil, salt and 2 ½ cup of all purpose flour and mix using stand mixer utill dough is formed.
  3. Dust the working surface. Transfer the dough and knead it for atleast 5 to 6 minutes till you get soft, smooth and elastic dough. You can add additional flour while kneading only if the dough sticks to your hand or working surface
  4. Coat the bowl with ½ teaspoon of olive oil. Transfer the dough to this bowl and turn the dough around so that it is coated with oil. Cover it and keep it in warm place for about 2 hours or until it is doubled.
  5. Now transfer the dough onto the working surface and lightly pat it to about 1 inch thick flat shape. Divide the dough into 8 equal pieces.
  6. Make each pieces into small round ball and sprinkle some flour on top of each ball. Cover this with bees wrap or kitchen towel and let it rest for about 30 minutes
  7. Dust the working surface. Pat the dough ball flat with your fingers and using rolling pin, roll them to round bread about quarter inch thick. Let each of this round bread rest for about 5 minutes even before cooking it.
  8. Cook on cast iron pan (about 2min each side)
    Tofu:
    2 blocks firm tofu
    Marinade for tofu:
    2tbsp soy sauce
    2tbsp olive oil
    1tbsp corriander powder
    1tbsp garlic powder
    1/2tbsp cumin
    1/2tbsp paprika
    1tsp dried oregano
    1Tsp dried thyme
    1tsp cayenne
  9. Prepare marinade and set aside in a small bowl
  10. Boil tofu for 2 mins
  11. Drain tofu and coat in the marinade
  12. Cook on cast iron pan
    Tzatziki
    1c plain dairy free yogurt
    1 large cucumber
    2 cloves garlic
    1tsp olive oil
    1tsp dried dill
    Sea salt to taste
  13. Dice cucumber & mince garlic
  14. Mix all other ingredients
  15. Add cucumber and garlic to mixture
    Fries:
    I used red potatoes and salt. Sliced red potatoes m, added salt and baked for 45min on 425 F
    We added some plant based smoked provolone cheese and pickled red onions & tomato as toppings!
