HOMEMADE KETO BOUNTY BARS

Ingredients:

For the Coconut Filling:

  • 1 ½ cups unsweetened shredded coconut
  • ⅓ cup coconut oil or unsalted butter, melted
  • ⅓ cup powdered erythritol or another keto-friendly sweetener (adjust to taste)
  • 1 teaspoon vanilla extract
  • A pinch of salt

  • ½ cup unsweetened cocoa powder
  • ¼ cup coconut oil or unsalted butter
  • ¼ cup powdered erythritol or another keto-friendly sweetener
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Coconut Filling:
    • In a large bowl, combine the shredded coconut, melted coconut oil or butter, powdered erythritol, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined and the mixture sticks together.
  2. Shape the Bars:
    • Line a baking dish or a tray with parchment paper. You can use a 9×5-inch loaf pan or a similar-sized tray.
    • Press the coconut mixture firmly into the bottom of the dish to form an even layer. Use the back of a spoon or your hands to smooth it out.
    • Place the dish in the freezer for about 30 minutes, or until the coconut layer is firm and set.
  3. Prepare the Chocolate Coating:
    • In a microwave-safe bowl or a double boiler, melt the coconut oil or butter. Stir in the cocoa powder, powdered erythritol, vanilla extract, and salt until smooth and well combined.
    • Allow the chocolate mixture to cool slightly.
  4. Coat the Bars:
    • Once the coconut layer is firm, lift it out of the dish using the parchment paper and place it on a cutting board.
    • Cut the coconut layer into bar shapes of your desired size.
    • Dip each bar into the chocolate coating, ensuring it’s completely covered. You can use a fork to help with the dipping and let any excess chocolate drip off.
    • Place the coated bars back on the parchment paper.
  5. Set the Bars:
    • Return the bars to the freezer for another 15-20 minutes, or until the chocolate coating is set.
  6. Store:
    • Store the keto Bounty bars in an airtight container in the refrigerator or freezer. They should keep well for a few weeks in the fridge or a couple of months in the freezer.
