HOMEMADE KETO BOUNTY BARS
Ingredients:
For the Coconut Filling:
- 1 ½ cups unsweetened shredded coconut
- ⅓ cup coconut oil or unsalted butter, melted
- ⅓ cup powdered erythritol or another keto-friendly sweetener (adjust to taste)
- 1 teaspoon vanilla extract
- A pinch of salt

- ½ cup unsweetened cocoa powder
- ¼ cup coconut oil or unsalted butter
- ¼ cup powdered erythritol or another keto-friendly sweetener
- 1 teaspoon vanilla extract

Instructions:
- Prepare the Coconut Filling:
- In a large bowl, combine the shredded coconut, melted coconut oil or butter, powdered erythritol, vanilla extract, and salt. Mix well until all ingredients are thoroughly combined and the mixture sticks together.
- Shape the Bars:
- Line a baking dish or a tray with parchment paper. You can use a 9×5-inch loaf pan or a similar-sized tray.
- Press the coconut mixture firmly into the bottom of the dish to form an even layer. Use the back of a spoon or your hands to smooth it out.
- Place the dish in the freezer for about 30 minutes, or until the coconut layer is firm and set.
- Prepare the Chocolate Coating:
- In a microwave-safe bowl or a double boiler, melt the coconut oil or butter. Stir in the cocoa powder, powdered erythritol, vanilla extract, and salt until smooth and well combined.
- Allow the chocolate mixture to cool slightly.
- Coat the Bars:
- Once the coconut layer is firm, lift it out of the dish using the parchment paper and place it on a cutting board.
- Cut the coconut layer into bar shapes of your desired size.
- Dip each bar into the chocolate coating, ensuring it’s completely covered. You can use a fork to help with the dipping and let any excess chocolate drip off.
- Place the coated bars back on the parchment paper.
- Set the Bars:
- Return the bars to the freezer for another 15-20 minutes, or until the chocolate coating is set.
- Store:
- Store the keto Bounty bars in an airtight container in the refrigerator or freezer. They should keep well for a few weeks in the fridge or a couple of months in the freezer.
