Homemade aloo palak
ingridients
2c small diced potato
1/2C water
4c chopped spinach
1/2 of a large onion, or a whole small onion, sliced thin
Garlic, as much as your heart desires
2t mustard seeds
Salt, pepper, cumin, dried chives, cinnamon, nutmeg, curry powder, red pepper flakes, turmeric (I don’t measure seasonings, follow your bliss)
2T coconut milk (optional)
1) Throw some oil in a pan and saute the onions until soft and lightly browned, add garlic and mustard seeds and cook a few more minutes.
2) Add potatoes and cook for about five minutes.
3) Add water, cover and cook for 20-30 min checking potatoes occasionally. When potatoes are fork tender, remove cover and add dry seasonings.
4) Add spinach, saute til wilted, add coconut milk. Stir til combined and remove from heat.
