Home Made Loaded Zucchini Bake

Ingredients:
- 3 medium zucchinis (sliced thinly)
- 1 cup cooked chicken or turkey (shredded – optional for extra protein)
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated parmesan cheese
- 1/2 cup chopped onions
- 1/2 cup chopped bell peppers (any color)
- 2 cloves garlic (minced)
- 1/2 cup sour cream or Greek yogurt
- 2 eggs
- 1 tsp Italian seasoning
- 1/2 tsp chili flakes (optional)
- Salt & black pepper to taste
- Olive oil or butter for greasing
Instructions:
- Preheat oven to 375°F (190°C).
- Lightly grease a baking dish with olive oil or butter.
- In a skillet, sauté onions, bell peppers, and garlic until soft. Set aside.
- In a large bowl, whisk together eggs, sour cream (or Greek yogurt), Italian seasoning, salt, and pepper.
- Add zucchini slices, sautéed veggies, shredded chicken (if using), and half of the mozzarella and cheddar. Mix well.
- Pour mixture into the baking dish.
- Top with remaining mozzarella, cheddar, and parmesan cheese.
- Bake for 30–35 minutes or until golden and bubbly.
- Let it cool slightly before slicing.
✅ Tips:
- You can add crumbled bacon or cooked ground beef for a more “loaded” version.
- Add a sprinkle of green onions or parsley on top for freshness.
