Home Made Loaded Zucchini Bake

Ingredients:

  • 3 medium zucchinis (sliced thinly)
  • 1 cup cooked chicken or turkey (shredded – optional for extra protein)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup chopped onions
  • 1/2 cup chopped bell peppers (any color)
  • 2 cloves garlic (minced)
  • 1/2 cup sour cream or Greek yogurt
  • 2 eggs
  • 1 tsp Italian seasoning
  • 1/2 tsp chili flakes (optional)
  • Salt & black pepper to taste
  • Olive oil or butter for greasing

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Lightly grease a baking dish with olive oil or butter.
  3. In a skillet, sauté onions, bell peppers, and garlic until soft. Set aside.
  4. In a large bowl, whisk together eggs, sour cream (or Greek yogurt), Italian seasoning, salt, and pepper.
  5. Add zucchini slices, sautéed veggies, shredded chicken (if using), and half of the mozzarella and cheddar. Mix well.
  6. Pour mixture into the baking dish.
  7. Top with remaining mozzarella, cheddar, and parmesan cheese.
  8. Bake for 30–35 minutes or until golden and bubbly.
  9. Let it cool slightly before slicing.

Tips:

  • You can add crumbled bacon or cooked ground beef for a more “loaded” version.
  • Add a sprinkle of green onions or parsley on top for freshness.
