Ingredients
For the Ladyfingers:
- 3 large eggs, separated
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup erythritol or your preferred keto sweetener
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
For the Mascarpone Cream:
- 1 1/2 cups mascarpone cheese
- 1 cup heavy whipping cream
- 1/3 cup erythritol or your preferred keto sweetener
- 1 teaspoon vanilla extract
For the Coffee Soak:
- 1 cup strong brewed coffee, cooled
- 2 tablespoons rum or brandy (optional)
- 1 tablespoon erythritol or your preferred keto sweetener
For Dusting:
- 2 tablespoons unsweetened cocoa powder
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Make the Ladyfingers:
- In a large bowl, beat the egg yolks, erythritol, and vanilla extract until the mixture is pale and fluffy.
- In another bowl, sift together the almond flour, coconut flour, baking powder, and salt.
- Gently fold the dry ingredients into the egg yolk mixture until well combined.
- In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form.
- Gently fold the egg whites into the batter, taking care not to deflate them.
- Transfer the batter to a piping bag and pipe ladyfinger shapes onto the prepared baking sheet.
- Bake for 10-12 minutes or until the ladyfingers are lightly golden and set. Allow to cool completely.
- Prepare the Mascarpone Cream:
- In a large bowl, beat the mascarpone cheese, erythritol, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the mascarpone mixture until well combined.
- Prepare the Coffee Soak:
- In a shallow dish, combine the brewed coffee, rum or brandy (if using), and erythritol.
- Assemble the Tiramisu:
- Dip each ladyfinger briefly into the coffee soak, ensuring they are well coated but not soggy.
- Arrange a layer of soaked ladyfingers at the bottom of a 9×9-inch dish.
- Spread half of the mascarpone cream over the ladyfingers.
- Repeat with another layer of soaked ladyfingers and the remaining mascarpone cream.
- Smooth the top with a spatula and dust generously with cocoa powder.
- Chill:
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld together.
