Home Made Keto Tiramisu

Ingredients

For the Ladyfingers:

  • 3 large eggs, separated
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 cup erythritol or your preferred keto sweetener
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar

For the Mascarpone Cream:

  • 1 1/2 cups mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/3 cup erythritol or your preferred keto sweetener
  • 1 teaspoon vanilla extract

For the Coffee Soak:

  • 1 cup strong brewed coffee, cooled
  • 2 tablespoons rum or brandy (optional)
  • 1 tablespoon erythritol or your preferred keto sweetener

For Dusting:

  • 2 tablespoons unsweetened cocoa powder

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Make the Ladyfingers:
    • In a large bowl, beat the egg yolks, erythritol, and vanilla extract until the mixture is pale and fluffy.
    • In another bowl, sift together the almond flour, coconut flour, baking powder, and salt.
    • Gently fold the dry ingredients into the egg yolk mixture until well combined.
    • In a separate bowl, beat the egg whites with the cream of tartar until stiff peaks form.
    • Gently fold the egg whites into the batter, taking care not to deflate them.
    • Transfer the batter to a piping bag and pipe ladyfinger shapes onto the prepared baking sheet.
    • Bake for 10-12 minutes or until the ladyfingers are lightly golden and set. Allow to cool completely.
  3. Prepare the Mascarpone Cream:
    • In a large bowl, beat the mascarpone cheese, erythritol, and vanilla extract until smooth.
    • In another bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Prepare the Coffee Soak:
    • In a shallow dish, combine the brewed coffee, rum or brandy (if using), and erythritol.
  5. Assemble the Tiramisu:
    • Dip each ladyfinger briefly into the coffee soak, ensuring they are well coated but not soggy.
    • Arrange a layer of soaked ladyfingers at the bottom of a 9×9-inch dish.
    • Spread half of the mascarpone cream over the ladyfingers.
    • Repeat with another layer of soaked ladyfingers and the remaining mascarpone cream.
    • Smooth the top with a spatula and dust generously with cocoa powder.
  6. Chill:
    • Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld together.
