Home Made Keto Blueberry Lemon Bread

Ingredients:

  • 2 cups almond flour
  • ½ cup granulated erythritol (or sweetener of choice)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup unsalted butter, melted
  • ¼ cup unsweetened almond milk
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract
  • ½ cup fresh or frozen blueberries

Instructions:

1️⃣ Preheat oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
2️⃣ Mix dry ingredients: In a bowl, whisk together almond flour, sweetener, baking powder, and salt.
3️⃣ Combine wet ingredients: In another bowl, beat eggs, then add melted butter, almond milk, lemon juice, lemon zest, and vanilla.
4️⃣ Mix & Fold: Slowly mix wet ingredients into dry until combined. Gently fold in blueberries.
5️⃣ Bake: Pour batter into the pan and bake for 40-50 minutes, or until a toothpick inserted comes out clean.
6️⃣ Cool & Enjoy: Let it cool before slicing. Perfect with a cup of coffee or tea! ☕🍰
