Stuffing the Pepper:
Spread hummus inside the hollowed-out bell pepper, ensuring it covers the entire interior.

Layer shredded carrots, sliced cucumber, and shredded lettuce (or spinach) inside the pepper.
Season:

Assemble:
Place the top of the bell pepper back on to close the sandwich.
