Home Made Bell Pepper Sandwich

Ingredients:

  • 1 large bell pepper (any color you prefer)
  • 1/4 cup hummus (store-bought or homemade)
  • 1/4 cup shredded carrots
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup shredded lettuce or baby spinach
  • Salt and pepper to taste

Instructions:

  1. Prepare the Bell Pepper:
    • Wash the bell pepper thoroughly. Slice off the top and bottom to create flat surfaces. Carefully remove the seeds and membranes from inside the pepper.
  2. Stuffing the Pepper:
    • Spread hummus inside the hollowed-out bell pepper, ensuring it covers the entire interior.
  3. Add Vegetables:
    • Layer shredded carrots, sliced cucumber, and shredded lettuce (or spinach) inside the pepper.
  4. Season:
    • Sprinkle with salt and pepper to taste.
  5. Assemble:
    • Place the top of the bell pepper back on to close the sandwich.
  6. Serve:
    • Slice the stuffed bell pepper into rounds or enjoy it whole as a sandwich.
