Home Made Bell Pepper Sandwich
Ingredients:
- 1 large bell pepper (any color you prefer)
- 1/4 cup hummus (store-bought or homemade)
- 1/4 cup shredded carrots
- 1/4 cup thinly sliced cucumber
- 1/4 cup shredded lettuce or baby spinach
- Salt and pepper to taste
Instructions:
- Prepare the Bell Pepper:
- Wash the bell pepper thoroughly. Slice off the top and bottom to create flat surfaces. Carefully remove the seeds and membranes from inside the pepper.
- Stuffing the Pepper:
- Spread hummus inside the hollowed-out bell pepper, ensuring it covers the entire interior.
- Add Vegetables:
- Layer shredded carrots, sliced cucumber, and shredded lettuce (or spinach) inside the pepper.
- Season:
- Sprinkle with salt and pepper to taste.
- Assemble:
- Place the top of the bell pepper back on to close the sandwich.
- Serve:
- Slice the stuffed bell pepper into rounds or enjoy it whole as a sandwich.
