Home Made 2 Point Waffles
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar substitute (such as Stevia or monk fruit)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsweetened almond milk (or any other milk of your choice)
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Waffle Iron:
- Preheat your waffle iron according to the manufacturer’s instructions.
- Prepare the Dry Ingredients:
- In a large mixing bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
- Prepare the Wet Ingredients:
- In a separate bowl, whisk together the almond milk, eggs, and vanilla extract.
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Cook the Waffles:
- Lightly coat the waffle iron with non-stick cooking spray.
- Pour the batter onto the preheated waffle iron, spreading it evenly.
- Close the waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.
- Serve:
- Carefully remove the waffles from the iron and serve immediately.
Notes:
- Adjust the sweetness to your liking by adding more or less sugar substitute.
- You can enhance the flavor by adding a pinch of cinnamon or nutmeg to the dry ingredients.
- Serve the waffles with fresh fruit, a dollop of Greek yogurt, or a drizzle of sugar-free syrup for a low-point topping.
