Home Made 2 Point Waffles

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar substitute (such as Stevia or monk fruit)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened almond milk (or any other milk of your choice)
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat the Waffle Iron:
    • Preheat your waffle iron according to the manufacturer’s instructions.
  2. Prepare the Dry Ingredients:
    • In a large mixing bowl, whisk together the flour, sugar substitute, baking powder, baking soda, and salt.
  3. Prepare the Wet Ingredients:
    • In a separate bowl, whisk together the almond milk, eggs, and vanilla extract.
  4. Combine Wet and Dry Ingredients:
    • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
  5. Cook the Waffles:
    • Lightly coat the waffle iron with non-stick cooking spray.
    • Pour the batter onto the preheated waffle iron, spreading it evenly.
    • Close the waffle iron and cook according to the manufacturer’s instructions until the waffles are golden brown and crisp.
  6. Serve:
    • Carefully remove the waffles from the iron and serve immediately.

Notes:

  • Adjust the sweetness to your liking by adding more or less sugar substitute.
  • You can enhance the flavor by adding a pinch of cinnamon or nutmeg to the dry ingredients.
  • Serve the waffles with fresh fruit, a dollop of Greek yogurt, or a drizzle of sugar-free syrup for a low-point topping.
