  1. 2 cups high-protein milk
    (skim milk or ultra-filtered milk for extra protein)
  2. 2ยฝ teaspoons unflavored gelatin powder
  3. Sugar-free sweetener, to taste
    (stevia, monk fruit, or erythritol)

  1. Bloom the gelatin
    • Add gelatin to ยฝ cup cold milk in a bowl
    • Let sit 5 minutes
  2. Heat the milk
    • Warm the remaining 1ยฝ cups milk in a saucepan
    • Do not boil (just hot)
  3. Combine
    • Stir bloomed gelatin into hot milk
    • Mix until completely dissolved
    • Add sugar-free sweetener to taste
  4. Set the cake
    • Pour into a small silicone mold or dish
    • Chill 2โ€“3 hours until firm
  5. Serve
    • Slice like cake or unmold for a clean shape
