  • 1 cup cooked rice (white or brown)
  • 1 cup Greek yogurt (for creaminess + protein)
  • 1 scoop vanilla or unflavored protein powder
  • 3 large eggs
  • ยฝ cup milk (dairy or plant-based)
  • ยผ cup honey or maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ยฝ tsp baking powder
  • Pinch of salt

  1. Preheat oven
    To 175ยฐC (350ยฐF). Grease an 8-inch cake pan or line with parchment.
  2. Mix wet ingredients
    In a large bowl, whisk eggs, milk, honey, vanilla, and Greek yogurt until smooth.
  3. Combine dry ingredients
    In another bowl, mix cooked rice, protein powder, cinnamon, baking powder, and salt.
  4. Combine all
    Fold the dry mixture into wet ingredients until evenly combined.
  5. Bake
    Pour batter into pan and bake for 35โ€“40 minutes until the top is golden and a toothpick inserted comes out clean.
  6. Cool and serve
    Let cool slightly before slicing. Optionally, dust with cinnamon or drizzle with Greek yogurt glaze.
