- 1 cup Greek yogurt (for creaminess + protein)
- 1 scoop vanilla or unflavored protein powder
- 3 large eggs
- ยฝ cup milk (dairy or plant-based)
- ยผ cup honey or maple syrup
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ยฝ tsp baking powder
- Pinch of salt

- Preheat oven
To 175ยฐC (350ยฐF). Grease an 8-inch cake pan or line with parchment. - Mix wet ingredients
In a large bowl, whisk eggs, milk, honey, vanilla, and Greek yogurt until smooth. - Combine dry ingredients
In another bowl, mix cooked rice, protein powder, cinnamon, baking powder, and salt. - Combine all
Fold the dry mixture into wet ingredients until evenly combined. - Bake
Pour batter into pan and bake for 35โ40 minutes until the top is golden and a toothpick inserted comes out clean. - Cool and serve
Let cool slightly before slicing. Optionally, dust with cinnamon or drizzle with Greek yogurt glaze.
