🥩 Ingredients
Beef + Veggies

1.5 lbs lean ground beef (93% lean or better) or thinly sliced sirloin

1 medium onion, sliced

1 large green bell pepper, sliced

1 large red bell pepper, sliced

8 oz mushrooms, sliced (optional but adds flavor)

3 cloves garlic, minced

1 tbsp olive oil (if needed)

1 tsp salt

½ tsp black pepper

1 tsp onion powder

1 tsp garlic powder

1 tsp paprika

½ tsp Worcestershire sauce (optional but recommended)

High-Protein Creamy Mix

1 cup low-fat cottage cheese (blended smooth)

4 oz light cream cheese (softened)

½ cup plain Greek yogurt

2 large eggs

1 tbsp steak seasoning or extra salt/pepper to taste

Cheese

1.5 cups reduced-fat mozzarella or provolone, shredded

2–3 slices provolone for the top (optional)

👩‍🍳 Instructions

  1. Preheat oven

Heat to 375°F (190°C).

  1. Cook the beef

In a large skillet, cook ground beef until browned.

Drain any excess fat if necessary.

Season with salt, pepper, onion powder, garlic powder, and paprika.

Remove beef and set aside.

  1. Sauté veggies

In the same skillet, add a drizzle of olive oil if the pan is dry.

Add onions, peppers, and mushrooms.

Cook 6–7 minutes until softened.

Add minced garlic and cook 1 more minute.

Stir in Worcestershire sauce.

Add the cooked beef back into the pan and mix everything together.

  1. Make the high-protein creamy mixture

In a bowl, whisk together:
✔ blended cottage cheese
✔ Greek yogurt
✔ cream cheese
✔ eggs
✔ steak seasoning

Whisk until smooth and creamy.

  1. Assemble the casserole

Transfer the beef/veggie mixture into a greased 9×13 baking dish.

Pour the creamy protein mixture evenly over the top and stir lightly to combine.

Sprinkle the shredded mozzarella/provolone evenly over the top.

Layer provolone slices on top if using.

  1. Bake

Bake for 25–30 minutes, or until:

Cheese is melted

Edges are bubbling

Center is set

Broil for 2 minutes at the end for a browned top (optional but delicious).

Over sautéed mushrooms

On top of roasted veggies

Or in a low-carb tortilla for a “Philly wrap”
