High-Protein Lemon Mousse

Ingredients (Serves 2–3)

  • 1/2 cup Greek yogurt (unsweetened, full-fat or 2%)
  • 1/2 cup cottage cheese (small curd)
  • 1/4 cup protein powder (vanilla or unflavored whey or plant-based)
  • 2–3 tbsp lemon juice (freshly squeezed)
  • 1 tsp lemon zest (optional, for extra flavor)
  • 1–2 tbsp honey or sweetener of choice (adjust to taste)
  • 1/4 tsp vanilla extract
  • Pinch of salt
  • Optional garnish: lemon slices, mint, or a few berries

Instructions

  1. Blend base ingredients
    • In a blender or food processor, combine Greek yogurt, cottage cheese, protein powder, lemon juice, lemon zest, honey, vanilla, and a pinch of salt.
    • Blend until smooth and creamy. Taste and adjust sweetness or lemon juice as needed.
  2. Chill the mousse
    • Transfer the mousse to serving cups or bowls.
    • Refrigerate for at least 1–2 hours to firm up and let flavors meld.
  3. Optional step for extra fluffiness
    • Whip 1/4 cup heavy cream or aquafaba (for vegan) until soft peaks form.
    • Fold gently into the mousse to make it lighter and airy.
  4. Serve
    • Garnish with lemon zest, thin lemon slices, or fresh berries.
    • Serve chilled.
